Ingredients (7)
  • 1 package (6.9 oz.) RICE A RONI Chicken
  • 6 oz. kale, finely sliced
  • 1/2 cup shelled edamame
  • 1/3 cup roasted salted pumpkin seeds or pepitas
  • Lemon Vinaigrette (recipe below)
  • 12 oz. cooked shredded chicken
  • 1 can (15 oz.) DOLE® Mandarin Oranges, drained
Directions
  1. Prepare rice-pasta mixture, according to package directions.  

  2. Toss together rice, chicken, mandarin oranges, kale, edamame and pepitas, in large bowl.  

  3. Pour lemon vinaigrette over salad, to taste; toss to evenly coat.  

     


  4. Lemon Vinaigrette - Whisk together 1/2 cup olive oil, 1/4 cup lemon juice, 1 teaspoon chopped fresh mint and 1/2 teaspoon sugar, in small bowl.  Makes 3/4 cup.
