Ingredients (11)
  • 1 can (6 oz. or 8.4 oz.) DOLE® Pineapple Juice
  • 1 tablespoon sesame seed
  • 1 cup, canned chow mein
  • 1 teaspoon sesame oil
  • 1 pkg. (6 oz.) DOLE Baby Spinach
  • 3/4 pound boneless, skinless chicken breasts, cubed
  • 1 can (11 oz.) DOLE Mandarin Oranges
  • 3 green onions, chopped
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped fresh basil
  • 1 cup red bell pepper, chopped
Directions
  1. Bring pineapple juice to a boil in saucepan.  Reduce to half (1/2 cup).  Cool; whisk in sesame seed and oil.
  2. Combine spinach, chicken, mandarin oranges, green onions, cilantro, basil, bell pepper and chow mein in large bowl.
  3. Pour salad dressing over salad.  Toss to coat evenly.  Serve.
