DOLE® Carrot and Fruit Loaf Cake

You will need

  • 1/2 cup of oil
  • 1 cup white sugar
  • 2 large eggs
  • 1 cup all-purpose flour, sifted
  • 1 tsp. cinnamon powder
  • 1 tsp. baking soda, sifted
  • - pinch of fine salt
  • 1 cup of carrots, grated
  • 1 cup of Seasons Tropical Fruit Cocktail, drained

Method

  1. Preheat oven to 350°F.
  2. Grease and line loaf pans.
  3. Combine oil, sugar, eggs, flour, cinnamon powder, baking soda, salt, carrots, and Seasons Tropical Fruit Cocktail in a big bowl.
  4. Pour the batter into prepared loaf pans.
  5. Bake for 25-30 mins (depending on the size of loaf pans).
