You will need

1/2 cup of oil

1 cup white sugar

2 large eggs

1 cup all-purpose flour, sifted

1 tsp. cinnamon powder

1 tsp. baking soda, sifted

- pinch of fine salt

1 cup of carrots, grated

1 cup of Seasons Tropical Fruit Cocktail, drained
Method
- Preheat oven to 350°F.
- Grease and line loaf pans.
- Combine oil, sugar, eggs, flour, cinnamon powder, baking soda, salt, carrots, and Seasons Tropical Fruit Cocktail in a big bowl.
- Pour the batter into prepared loaf pans.
- Bake for 25-30 mins (depending on the size of loaf pans).
