You will need

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup DOLE® Crushed Pineapple, drained
  • 1 egg, beaten
  • 1 egg white, beaten
  • 1/2 cup low-fat milk
  • 1/2 cup vegetable oil
  • 1/4 cup diced green chilies
  • 1 1/4 cups finely chopped smoked cheddar cheese

Method

  1. In large bowl, stir together flour, cornmeal, baking powder and salt.
  2. In medium bowl, whisk together drained pineapple (3/4 cup), egg, egg white, milk, oil and chilies.
  3. Stir into dry mixture just until moistened.
  4. Stir in cheese.
  5. Spoon batter into paper-lined muffin cups coated with vegetable cooking spray.
  6. Bake at 400°F for 18 to 20 minutes or until wooden pick inserted comes out clean.
