You will need

1 cup
all-purpose flour

1 cup
cornmeal

1 tbsp
baking powder

1/2 tsp
salt

DOLE® Crushed Pineapple, drained

egg, beaten

egg white, beaten

1/2 cup
low-fat milk
-
1/2 cup
vegetable oil

1/4 cup
diced green chilies
-
1 1/4 cups
finely chopped smoked cheddar cheese
Method

In large bowl, stir together flour, cornmeal, baking powder and salt.

In medium bowl, whisk together drained pineapple (3/4 cup), egg, egg white, milk, oil and chilies.

Stir into dry mixture just until moistened.

Stir in cheese.

Spoon batter into paper-lined muffin cups coated with vegetable cooking spray.

Bake at 400°F for 18 to 20 minutes or until wooden pick inserted comes out clean.
