Pineapple Orange Walnut Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup butter or margarine, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tbsp grated orange peel
  • 1/4 cup orange juice
  • 1 cup seedless or golden raisins
  • 1 cup chopped walnuts, toasted

Steps to Sunshine!

  1. In medium bowl, stir together flour, baking powder, baking soda and salt; set aside.
  2. In large bowl, using electric mixer, beat together butter and sugar until light and fluffy.
  3. Beat in egg, orange peel and orange juice.
  4. Alternately stir in one-third flour mixture and one-half undrained crushed pineapple until just blended, ending with flour.
  5. Stir in raisins and walnuts.
  6. Pour batter into 9 x 5 inch loaf pan sprayed with non-stick vegetable cooking spray.

  7. Bake at 350°F for 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes, remove from pan and cool completely on wire rack.
