Mini Pineapple Bacon Galettes

You will need

  • 1 cup DOLE® Crushed Pineapple, well drained
  • 6 slices lean bacon, cooked, crumbled
  • 1 tbsp maple syrup
  • 1 tsp all-purpose flour
  • 1 pkg (400g) refrigerated pie crusts dough
  • 1 egg
  • 1 tbsp water

Method

  1. In small bowl, stir together drained pineapple (3/4 cup), bacon, maple syrup and flour. Set aside.
  2. Cut 10 (3-3/4 inch) circles from pie crusts (5 from each), using biscuit cutter or drinking glass. Place on cookie sheets sprayed with vegetable cooking spray.
  3. Spread a generous tablespoon of pineapple filling over each crust leaving about 1/4 inch at edge.
  4. Fold in crust a bit, overlapping dough to make pleat edges.
  5. Beat egg and water in small bowl.
  6. Brush edge of crusts with egg mixture.
  7. Bake at 400°F for 16 to 18 minutes or until crust is golden.
