Mexican Pineapple Relish

You will need

  • 2 cans (398 mL) DOLE® Pineapple Tidbits, drained
  • 1 1/2 cups chopped fresh tomato
  • 3 tbsp chopped red onion
  • 3 tbsp chopped fresh cilantro or parsley
  • 1 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 fresh or canned jalapeno pepper, seeded and finely chopped
  • 1/4 tsp salt

Method

  1. In large bowl, stir together pineapple, tomato, onion, cilantro, vinegar, garlic, hot pepper and salt.
  2. Cover; refrigerate for at least one hour, to blend flavours.
  3. Serve with tortilla chips or grilled chicken or fish.
