
Mexican Pineapple Relish
Ingredients

1 1/2 cups chopped fresh tomato

3 tbsp chopped red onion

3 tbsp chopped fresh cilantro or parsley

1 tbsp balsamic vinegar

1 clove garlic, minced

1 fresh or canned jalapeno pepper, seeded and finely chopped

1/4 tsp salt

In large bowl, stir together pineapple, tomato, onion, cilantro, vinegar, garlic, hot pepper and salt.

Cover; refrigerate for at least one hour, to blend flavours.

Serve with tortilla chips or grilled chicken or fish.
