You will need

  • 1 can (398mL) DOLE® Pineapple Chunks
  • 1 pkg (340g) mixed green salad blend
  • 1 tbsp grated orange peel
  • 1 orange, peeled, halved and sliced
  • 1/2 cup halved and sliced red onion
  • 1 cup chopped nuts, toasted
  • 1/2 cup crumbled feta cheese
  • 2 tbsp vegetable oil
  • 2 tbsp balsamic or red wine vinegar

Method

  1. Drain pineapple chunks, reserve 1/4 cup of the juice.
  2. In large bowl, combine pineapple chunks, salad blend, sliced orange, onion, nuts and feta; set aside.
  3. In small bowl, stir together reserved juice, orange peel, oil and vinegar. Pour over salad just before serving; toss to evenly coat.
